Our Story

Monster Mac Snacks, a family-run ice cream truck business. It was created to provide meaningful employment for my autistic son, Mac, upon his high school graduation this year(2025). As a North Carolina resident, Mac has a 10-15% chance of gaining purposeful employment. Since January 2024, my wife and I have explored many job opportunities for him and realized the ice cream truck business would be a perfect fit. As a 30-year Marine veteran, I am no stranger to creating positive solutions to challenging situations. My wife Rosie is a licensed mental health counselor who is constantly seeking practical outcomes for veterans and their families. Our combined experience and optimistic vision for our son can’t be matched. We have worked with Mac’s education team at the high school to create an Individual Educational Plan (IEP) centered around our business plan. This includes cleaning, taking orders, and conducting inventories.

OUR NAME

We originally settled on another name for our business, but someone in North Carolina had already taken it. Mac’s favorite book is “There is a Monster at the end of this book.” Mac also enjoys watching all the friendly monsters from Sesame Street. As his father and business partner, I am always trying to keep him up-to-date on everything we are doing. I have shown him many different pictures of potential vending trucks but he usually doesn’t get too excited. Then, I presented one to him covered in different “friendly” monsters, and he wanted to see more. That’s when I knew how we would paint our ice cream truck and what we would call it.
